Wild Rice Soup

INGREDIENTS

  • 1 (6 oz) pkg. wild rice
  • 1 c. finely chopped onion
  • 1 tsp. salt
  • 1 tsp. curry powder
  • 1/2 tsp. dry mustard
  • 1/2 tsp. pepper
  • 1/4 c. melted butter
  • 1 (8 oz.) pkg. sliced mushrooms
  • 1/2 c. sliced celery
  • 1/2 all purpose flour
  • 6 c. chicken broth
  • 2 c. half and half
  • 2/3 c. dry sherry
DIRECTIONS:
  1. Cook wild rice.
  2. Cook onion and next cfive ingredients in butter in Dutch Oven.
  3. Add mushrooms and celery.
  4. Cook until tender.
  5. Reduce heat to low.
  6. Add flour.
  7. Cook 1 minute, stirring constantly.
  8. Gradually add broth, stirring constantly until slightly thickened.
  9. Stir in rice, half and half and sherry.
  10. Cook until heated.
  11. Garnish with fresh chives
Makes 12 cups
