Strawberry
Turkey Salad

INGREDIENTS
- 1/4 cup red onions,
chopped
- 1/2 lb cooked turkey
breast, sliced
- 4 cups mixed salad
greens
- 3/4 cup celery,
sliced
- 1/4 cup plain low fat
yogurt, or sour cream
- 1/3 cup prepared
mango chutney, chopped
- 4 cups fresh
strawberries, stemmed and
cut in halves
- 1/4 cup nonfat
mayonnaise dressing
- 2 tbsp lime juice
- 4 fresh mint sprigs,
to garnish
- 1 cup red seedless
grapes
- salt and pepper, to
taste
Directions
In a small bowl, whisk
together first 5
ingredients to make
chutney dressing.
Line platter or
individual serving plates
with lettuce, top with
turkey, strawberries,
grapes, celery, and
onion.
Drizzle with chutney
dressing, garnish with
mint sprigs, and serve.
