LEMON HALIBUT

INGREDIENTS

  • 1 lemon, cut into wedges
  • 1-1/3 tbsp unsalted butter
  • 2 tbsp lemon juice
  • 1/8 tsp salt (optional)
  • 1-1/2 lb halibut steaks, thawed if frozen
  • 2 tbsp parsley, chopped

Directions

1. Melt butter in a heavy nonstick skillet over medium heat.

2. Arrange halibut steaks in skillet.

3. Drizzle with lemon juice and season with salt and pepper to taste.

4. Cover skillet and simmer 8-10 minutes or until fish flakes easily.

5. Serve with parsley and lemon wedges.

Makes 4 servings
