Baked Honey Chicken

INGREDIENTS

  • 1/4 c. honey
  • 1/4 c. lite soy sauce
  • 1/3 c. mined onion
  • 4 celery ribs, chopped
  • 2 (8 oz) cans sliced water chestnuts, drained
  • 2 T. grated fresh ginger
  • 2 minced garlic cloves
  • 1 (3 lb) whole chicken - skinned
  • 2 tsp. paprika

Directions

  1. Preheat oven to 375 degrees
  2. Combine first 5 ingredients in large zip-top plastic bag
  3. Add chicken
  4. Seal and chillfor 1 hour, turning occasionally
  5. Coat a rack in a roasting pan with cooking spray.
  6. Place chicken, breast side up, on rack.
  7. Pour marinade over chicken
  8. Cover with foil and bake for 45 minutes
  9. Uncover; coat chicken with Pam and sprinkle with paprika
  10. Bake UNCOVERED 45 more minutes or until done.
